摘要:研究了4种常见消毒剂对巴氏消毒奶中腐败微生物的杀菌效果,并在实际生产中应用。结果表明:二氧化氯、84消毒液、过氧乙酸和酒精对腐败样品中的微生物均具有杀菌效果,在4种杀菌剂推荐的使用范围中,过氧乙酸杀菌效果最优。选取浓度为1∶400的过氧乙酸应用于管路清洗消毒,结果显示采用过氧乙酸消毒的管道杀菌消毒效果与传统的热碱洗、热酸洗及热水洗等同。

Research of the Selection and Application of Disinfectant for Pasteurized Milk Processing Equipment

Abstract:This report studied the bactericidal effect of four commonly used disinfectants on spoilage microorganisms in pasteurized milk, and apply in the food processing. The results showed chlorine dioxide, 84 disinfectant, peracetic acid and ethanol all have bactericidal effect on the microorganisms and peracetic acid has the best disinfection effect among four disinfectants usage recommendations. The results showed that the disinfection effect of peracetic acid with concentration of 1:400 was equal to that of traditional hot alkaline washing, hot pickling and hot water washing.
